I love rice and so does my husband. We try to find different ways to prepare and enjoy this wonderful food. Through time, we found hundreds of recipes, some simple and some exotic, and have enjoyed preparing them. We've found some real winners, which I have published on this blog and some that are not so great, which are in my personal "do not" repeat folder. I have created this site to share those memorable dishes - which are all about this wonderful food called "rice".

Tandoori Fish

This is absolutely incredible.  I got this recipe from Nita's husband when he returned from a trip to India.  I decided to try it with fresh fish. What's great about this dish it has fabulous flavors but it is not spicy hot. I served it to the dance troupe before we did a performance. If you can, use fresh fish instead of frozen if at all possible.   Asian and ethnic grocery stores have large fish tanks with a good assortment of live fish to choose from.  Have your local fishmonger scale and clean the fish for you.














Ingredients:
2 whole fishes (cleaned) trout, sea bass or tilapia
2 inches of fresh ginger root (peeled and minced)
10 cloves of garlic (minced)
3 tblsp olive or canola oil
1/2 lime (juiced)
3 tblsp tomato puree
1 tblsp paprika
1 tblsp chili powder
1/2 tsp ground cumin
1/2 tsp ground tumeric
salt and pepper

Cut diagonal slits on each side of the fish.  Make sure you cut deep enough to expose the meat, but not all the way through the bones.  Place fishes in a glass or ceramic plate.  Place the remaining ingredients in a bowl and mix until it creates a paste.  Rub the paste all over the outside of fish on both sides.  Make sure some of the paste get between the diagonal cuts.  Rub some of the paste inside the cavity of the fish.  Use all the paste.  Cover the fish with plastic wrap and refrigerate for 30 minutes to marinade.

Set oven to broil and preheat in low.  Cover a baking dish or deep tray with foil.  Place fish in the foil covered dish and broil in the oven uncovered.  Broil one side for approximately 8 minutes.  Turn fish over and broil the other side for another 8 minutes.  Increase the setting to medium or high to allow the skin to crisp.  Watch carefully so as not to burn for appoximately 4 minutes; flip fish and do the same on the other side. Remove from the oven and serve with basmati rice and Tomato, Onion and Chilli salad (recipe available on this blogsite).

Tomato, Onion and Chilli Salad

This refreshing salad is absolutely great with fried or grilled foods.  Serve this over rice with the Tandoori fish. Yummmmm..... Adjust the spiciness by increasing or decreasing the number of chillies.











Ingredients:
2 large tomatoes (chopped)
1 red onion (finely chopped)
1-2 green chillies (remove seeds and finely chopped)
1/2 lime
1tsp sugar
salt and pepper

In a non-metallic bowl, place all the igredients and mix well.  Cover with plastic wrap and refrigerate until ready to serve.  Taste and adjust with salt and pepper before serving.

Tandoori Chicken

This is probably one of the most famous dishes from India.  This is absolutely wonderful. The spices add so much flavor, but not with heat. 



















Ingredients:
3lbs chicken (assorted pieces)
1/2 lemon
2 tblsp melted butter or ghee
salt and pepper

Masala Paste:
1 tblsp ginger paste
2 tblsp garlic paste
1 1/2 tblsp paprika
1 tsp cinnamon
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp chili powder
1/4 tsp ground cloves
3/4 cup yogurt
Few drops of edible red food coloring

In a small bowl, mix lemon juice and butter.  Rub the lemon juice and butter mixture all over the chicken pieces.  Season chicken with salt and pepper.  In a separate bowl make the masala paste by combining all the masala ingredients and mix until all have been incorporated.  Using your hand, rub all the chicken pieces with the masala paste.  Make sure all the chicken pieces are well coated. Cover with plastic wrap and refrigerate for 6 hours, preferably overnight. 

Preheat oven at 400 degrees.  Lay chicken pieces on a roasting rack and tent (lightly cover) with foil, place in oven and cook for 30 minutes.  Remove the foil. Change the oven setting to either broil or roast in a low setting.  Continue cooking the chicken for another 15 minutes or until chicken's juice runs clear.  Remove from the oven and let stand for 10 minutes, serve garnished with cilantro and lemon slices.  This is great with the vegetable pulao on this same blogsite. Enjoy!

Rogan Josh


Ingredients:

1 lb boneless cubes of beef or lamb
2 large tomatoes (chopped)
1 onion (chopped)
2 tblsp butter
2 tblsp garlic paste
2 tblsp ginger paste
2 tblsp tomato paste
2 bay leaves
2 tblsp ground coriander
1 1/2 tsp chilli powder
1/2 tsp ground tumeric
1 tsp garam masala
1/2 cup beef or vegetable broth

Marinade:
1 1/2 cups plain yogurt
1 tsp garlic powder
1 tsp onion powder

In a large bowl, combine all the ingredients for the marinade.  Add the lamb/beef and rub the marinade thoroughly.  Allow to marinade for 30 minutes.
In a food processor or blender, add onions and tomatoes, process until well blended. Add butter to a large skillet and melt.  Add garlic and ginger; stir fry gently.  Add bay leaves, coriander, tumeric garam masala and chilli powder. Continue to stir for 30 seconds; do not allow spices to burn.  Stir in blended tomato mixture, tomato paste and broth. Reduce heat and allow to simmer stirring occasionally for 5-8 minutes. Add the meat and the marinade. Continue to cook and stir for approximately 2 minutes. Reduce heat and cover.  Allow to cook for 30 minutes stirring occasionally. Add salt and pepper to taste.  Check sauce, do not allow to dry out.  Add a little water (few tablespoon) if necessary.  Cook for another 15-20 minutes.  Serve over basmati rice.

Chicken Tikka Masala


This is probably one of the most popular Indian dishes.  This is a recent invention made in one of the restaurants here in the United States.  Oven roasted or grilled chicken will work as well if you do not have tandoori chicken. To make Tandoori chicken all you need is Tandoori paste, which can be purchased in most ethnic grocery stores,  mix it with 1 cup of yogurt. Marinade the chicken piece then broiler in the oven.

Ingredients:

8 pieces cooked Tandoori chicken
1 14oz canned chopped tomatoes
1 1/4 cups heavy cream
2 tblsp butter
2 cloves garlic (minced)
1 fresh red chilli (seeded and minced)
3 tsp cumin
3 tsp paprika
salt and pepper to taste
Cilantro sprigs for garnish

Melt the butter in a large skillet. Add garlic and chilli and stir fry for 1 minute. Stir in cumin and paprika. Continue to stir for another 30 seconds.  Do not allow spices to burn.  Add  the tomatoes with juice and continue stirring.  Stir in the heavy cream and allow sauce to simmer in low for 10 minutes stirring frequently. Sauce should thicken.
Remove bones from the chicken pieces.  Add the chicken pieces to the sauce.  continue cooking for another 3-5 minutes or until chicken is heated through. Garnish with cilantro.


Kedgeree

This is a classic English dish served during brunch that originated from India when it was under the British rule.  I've always been curious about this dish and even more so when I met Chef Darren McGrady. When Darren published his cookbook "Eating Royally", I figured I had to try it.  Once I had his, I had to make it my own. So, here is "my" version of the Kedgeree. Thanks Darren for inspiring me.



Ingredients:
1 cup basmati rice
4 cups water
2-3 strands of saffron thread
2 cups heavy cream or half-and-half
1 1/2 tblsp curry powder
4 had boiled eggs (peeled and quartered)
2 stalks green onions (finely chopped)
1 1/2 lbs of  salmon or smoked haddock or, mackrel (flaked)
2 handfuls of cilantro or parsley (roughly chopped)
Cayenne pepper to taste (optional)
Salt and pepper to taste

Poaching Liquid for salmon:
1 bay leaf
1/2 lemon (sliced thinly)
5-6 whole pepper corns
enough water to cover salmon

If cooking rice in a rice cooker, place rice, water and saffron threads into rice cooker  and follow recommended cooking method. If not, place rice, 4 cups of water and saffron threads in a large pot and allow to boil. Cook until all liquid has been absorbed and rice is tender.  Reduce to low and cover and allow to steam for 15 minutes.  In a large separate sauce pan, combine heavy cream, curry and cayenne pepper, whisk until blended.  Allow the cream mixture to simmer until slightly thickened.  Add the rice and green onions, stirring constantly until well blended. Season with salt and pepper to taste.  Add flaked fish and continue to stir gently so as not to break up the fish.  Top with the hard boiled eggs and cilantro or parsley.  Serve while warm.

Poaching Salmon:

In a deep pan, add enough water to barely cover salmon, lemon and bayleaf.  When water starts to simmer, add the salmon. swirl water and pour over salmon.  Continue until salmon is cooked through and is a very light pink.  Remove from the poaching liquid.  Allow to cool slightly before flaking the meat.

Cauliflower and Carrot Curry

Ingredients:

4 carrots (cut into 1/2 rounds)
1 medium onion (minced)
3 garlic cloves (minced)
1 tblsp madras curry
1 tsp cumin
1 head cauliflower (cut into florets)
1 cup thawed green peas
1 cup unsweetened coconut milk
1 cup vegetable stock
1 tblsp vegetable or olive oil
Salt and pepper to taste

In a dutch oven or deep pan, heat the oil on medium. Add carrots and onion, stirring constantly until onions are a light golden color (approximately 5-6 minutes).  Add the garlic and continue stirring for approximately 1 minute.  Add curry and cumin, stirring continuously for another 30 seconds to bring out the flavors of the spices.  Do not allow the spices to burn (add a little more oil if needed.)  Add the cauliflower and vegetable stock.  Simmer until broth starts to bubble; add coconut milk.  Bring to a boil; reduce heat to low.  Cover and simmer for approximately 12-15 minutes.  Add the green peas and cook for another 2 minutes.  Season with salt and pepper to taste.  Spoon rice into a bowl and top it with the curry vegetables.

Stuffed Eggplant - India Style

My husband and I both love eggplant and I try to find as many ways to prepare it.  I found several recipes for stuffed eggplant, but I found them to be very un-interesting till I found this one.  Of course, had to make it my own by making some adjustments to the ingredients and cooking method. This is really great with rice.  I tried with ground lamb and it was fabulous.  It is also great with ground beef.  So try it both ways and see which one you like the best. 

Remember, nothing is set in stone. Try this recipe and adjust to suit your own taste.

Ingredients:

2 medium eggplants
2 tbsp of olive oil
3 tbsp of canola or vegetable oil
1 medium onion (minced)
1 1/2 tsp ginger pulp/paste (or minced)
2 tsp chilli powder
1 1/2 tsp ground coriander
3 tsp garlic pulp (or minced)
1/4 tsp tumeric
1 large tomato (finely chopped)
1 lb of ground lamb or beef
1 medium green bellpepper (chopped)
1 medium red bellpepper (chopped)
2 tbsp chopped cilantro
salt and pepper

Preheat oven to 350F. Cut eggplants in half lengthwise and scoop out the flesh (save for future use or discard). Make sure you do not remove too close to the bottom skin or the eggplant will trear when you fill it.  Heat the canola oil in a pan and lightly fry the eggplant pieces on both sides.  When the skin is starting to brown (2-3 minutes), remove and place in an ovenproof baking dish.

In a saucepan, heat 1 tbsp of olive oil and fry the onion until golden brown  Add the ginger, chilli powder, garlic, tumeric, and ground coriander. Stir continuously for approximately 1 minute, do not let spices burn.  Add tomatoes and continue to stir and fry for another 4-5 minutes.  Add ground lamb/beef, season with salt and pepper; continue to stir until meat is brown.  Add the chopped peppers and cilantro. Stir until well mixed.  Remove from heat. 

Spoon mixture into each eggplant shell. Do not worry about overfilling or creating a mound.  Brush the edges and outside of eggplant shell with remaining olive oil.   Cover loosely with foil and bake in preheated oven for 25 minutes.  During the last 10 minutes of cooking, remove the foil to allow the top to brown. Serve with basmati rice.

Kashmiri Style Chops

The cooking method to this is pretty interesting...so I had to try. It came out really great! I paired it up with the wild rice and mushroom pilaf and it was dinner. So simple.  I know it sounds very different, but I recommend it, you will not be disappointed.

Ingredients:
6 pork chops or lamb chops
1 piece cinnamon bark
1 bay leaf
1 tsp fennel seed
1/2 tsp peppercorns
4 green cardamon pods (pierced)
3 1/2 cups of milk (use whole)
1 cup plain yogurt
2 tbsp flour
1 1/2 tsp chilli powder
1 1/2 tsp of ginger pullp
1 tsp garlic pulp
1 tsp garam masala
salt and pepper
enough oil to fry chops

In a large sauce pan, place chops with milk, cinnamon bark, bay leaf, fennel seeds, peppercorns, cardamom pods, and salt. Bring to a boil. Lower the heat and continue to cook for another 15 minutes or until chops are cooked through.

In a bowl, mix yogurt, flour, chilli powder, ginger pulp, garlic pulp, garam masala, salt and pepper. Mix until well blended.  Remove the chops from the milk and coat with the spicy yogurt mixture.

Heat oil in a frying pan. Make sure oil is not smoking or very hot. Use medium to low heat. Add the chops, fry until one side is golden brown, turn them over and brown the other side. When done, transfer to a serving dish and serve with lime quarter and your favorite rice.

NOTE: To make it spicier, just increase the chilli powder, garlic and ginger pulp, and garam masala in the spicy yogurt mixture to suit your taste.

Lamb with Spiced Cardamom Rice



Don't let the list of ingredients scare you. This is an easy dish to prepare and what wonderful aromas it generates during cooking. Once done, the presentation and the flavors are great. The original recipe called for clay pot cooking. The preparation was time consuming. I experimented using a crock pot and my trusty rice cooker and found an easy and convenient cooking method that did not require me to stay in the kitchen the whole time. I think you will find this dish easy and impressive.
Ingredients:
1 large onion (quartered)
2 garlic cloves
1 small green chilli (halved) optional
2 inch fresh ginger root
1 tbsp ghee (clarified butter) or regular butter
1 tbsp vegetable oil or light olive oil
11/2 lb leg or shoulder of lamb cut in chunks
1 tbsp ground coriander
1 cinnamon stick broken into at least 3 pieces
2/3 cup plain yogurt
2/3 cup rice
1/3 cup dried apricots (chopped)
salt and pepper to taste
For the rice:
1 1/4 cup basmati rice
6 cardamom pods (split)
2 tbsp butter (cut into pieces)
3 tbsp cashnew nuts or sliced almonds
Garnish:
1 onion (sliced thinly and fried golden brown)
Sprigs of fresh cilantro
In a food processor, add the quartered onion, garlic, chilli and ginger and blend to a smooth paste. Heat ghee and vegetable oil in a pan. Fry the lamb in high heat in batches until brown. Remove from pan and set aside. In the hot pan, add the paste, ground coriander, cumin and broken cinnamon sticks. Cook for 1-2 minutes stirring constantly with a wooden spoon. Return the lamb to the pan and gradually add the yogurt stirring constantly to ensure lamb is well coated. Season with plenty of salt and pepper. Transfer the content of the pan to your crock pot and set the temperature to low and allow to cook for 3-4 hours.
Prepare rice during the last 30 minutes of the lamb's cooking time. Rinse the basmatic rice several times until water runs clear. Soak the basmati rice for 20 minutes in cold water. Drain and in a pot add the water, salt and rice. Bring to a boil until liquid has evaporated (approx. 10 min); remove from heat.
If using a rice cooker, rinse the basmati rice until water runs clear. Add 2 cups of water and the rice to the rice cooker. Turn rice cooker on and let rice cooker complete the cooking process. When all water has evaporated and before the rice cooker "clicks" over to "warm", follow the transfer process to the crock pot.
Add split cardamom to rice and stir. Add chopped apricots to lamb. Pile the rice ontop of the lamb in the crock pot, dot with butter pieces and sprinkle with cashnew nuts. Cover and cook for another 30 minutes.
Uncover and combine the lamb and rice together. Spoon to a bowl and garnish with the fried onions and sprigs of cilantro. Enjoy!
Note: I've prepared this without the green chilli. The other spices provide so much flavor you don't miss it.

Vegetable Pulao

This is a wonder dish that my friend Nita shared with me. I served it with a Morrocan style game hen. The flavors complimented each other, creating a wonderful "fusion".



Ingredients:

1 cup - mixed vegetables ( carrots, peas, beans and potato)
2 tbsp - fenugreek
2 cups - basmati rice
3 cups - water
2 tsp - cumin seeds
1 tsp - cardamom
1/2 tsp - cinnamon
1 tsp - red chili powder
2 - bay leaves
1 - onion (sliced in rings)
1 - tomato (chopped)
1/4 tsp - tumeric
2 tsp - coriander powder
4 tbsp - butter
Salt and pepper to taste
1 cup - coriander leaves (roughly chopped) optional


Heat butter in a pan until melted; add the onions and cook until translucent. Add cummin seeds, cardamom, cinamon, chili powder, tumeric, fenugreek, bay leaves and chili powder; stirring constantly (approx 2-3 min or until onions are brown). Do not allow the spices to burn. Add tomatoes, season with salt and pepper. Once tomatoes are done, add the vegetables. Continue stirring until vegetables are hot. Add rice and mix well. Add water and allow it to boil. Stir the pulao and reduce the heat to low or simmer and cover until all liquid is absorbed and rice is tender (approximately 15 min.) Garnish with coriander leaves and enjoy.


Note: you can control the "heat" by reducing the amount of chili powder and replacing it with paprika. If you prefer a much spicier dish, increase the amount of chili powder to taste.
Rice Cooker: The final cooking stage can also be completed in a rice cooker. If you are planning on using one, move the rice mixture to your rice cooker and add the water. Stir and cover and let the rice cooker finish the cooking process.
