This is a wonderful Thai rice soup! So yummy and filling; it could easily be your next comfort food. It is not spicy like other Thai foods. People from Thailand eat this for breakfast with steamed buns or as a late night snack.
Ingredients:
1/4 lb of raw shrimp (peeled and deveined)
1/4 lb of ground chicken
4 garlic cloves (chopped)
1 coriander root (chopped)
Pepper and salt to taste
1 spring onion (minced)
3 3/4 cups chicken stock
2 tblsp light soy sauce
2 tsp preserved radish (minced) - optional
1 3/4 cup cooked jasmine or basmati rice
1/2 inch ginger root (sliced)
1 Small Chinese cabbage (roughly chopped)
Garnish:
2 Spring onions (finely chopped)
Coriander leaves
Using a blender of food processor, blend coriander root, chopped garlic, salt and pepper. Blend until it makes a paste. In a bowl, mix the paste with the ground chicken and minced green onion until well incorporated. Using wet hands, pinch a small piece of the ground chicken mixture and shaped into a ball. Do this until all the ground chicken mixture is shaped into small balls.
In a stock pot, heat the chicken broth to boiling. Add the soy sauce and ginger. Reduce heat to medium and bring to a low boil or simmer. Add the chicken balls. Cook for approximately 3 minutes or until chicken is cooked through. Add the cooked rice, Chinese cabbage and shrimp. Cook for another 2 minutes until shrimp is pink and opaque. Season with salt to taste if necessary.
Serve hot in bowls. Garnish with the spring onions and coriander leaves. These go great with pot stickers.

Soy Chicken
So easy and flavorful. I find this under a different section of the Chinese restaurant's menu. It is always served with steamed rice and is priced differently than the other entrees. When I discovered the recipe, I tried it and now I can have Chinese soy chicken at home. This is great when serving a crowd. Picky eaters love it as well.
Ingredients:
1 lb chicken (cut up pieces)
1 cup water
2 stalks green onion (sliced)
2 inches ginger root (sliced)
1/4 cup soy sauce
2 star anise
2 tblsp sugar
In a sauce pan, brint to a boil, the water, soy sauce, star anise and sugar. Reduce to a low boil, add green onion, ginger root and chicken. Return to a full boil. Reduce to a simmer, cover and let cook for 45 minutes. Stirring occasionally to ensure all the chicken pieces are cooked in the sauce.
Remove chicken from sauce and discard cooking broth. Grill chicken for approximately 6-8 minutes either on the grill or in the oven's broiler on low. Rotate chicken and grill the other side for another 4-5 minutes. This is to develop a nice slightly crisp outer layer. Serve immediately with steam rice.

Nilagang Manok (Filipino Chicken Vegetable Soup)
This is not your ordinary chicken vegetable soup. As with many island cultures, soup is very big in the Philippines served over rice. You can use beef instead of chicken if you prefer. There are no strict rules on the vegetables either. Use whatever yo want, when I cannot find bok choy, I use cabbage. Cheyote is good with this and I have seen potatoes as well. This is very popular in many Filipino homes since it is an easy meal to prepare with lots of vegetables. The chicken broth just feeds your soul. Now, I did make some changes to the original recipe. I find I like more seasoning in mine. I played around until I came up with this version.
Ingredients:
1-1/2lbs chicken pieces (breasts, thighs, drumsticks, etc.)
2 cloves garlic (minced)
1/2 inch ginger (minced)
2 small stalks celery (whole w/leaves)
6-8 peppercorns
3-4 carrots (peeled and cut)
1 small onion (peeled and quartered)
8 cups chicken broth
1 bay leaf
1/2 lb of green beans
8 baby bok choys (cleaned and removed from core)
2 tblsp canola or olive oil
Salt to taste
In a large stock pot, heat the oil, then add onion, garlic, bay leaf, peppercorn and ginger. Cook while stirring for approximately 2-3 minutes. You want the onions to be a little soft and translucent, but do not want the garlic or ginger to brown. Add 8 cups of chicken broth, celery, carrots and chicken. Allow to get to a roiling boil, then reduce the heat to continue a low boil for approximately 30 minutes or until chicken is cooked through. Remove and discard celery stalks and bayleaf. Season with salt and add green beans; continue to cook for another 5 minutes. Add the baby bok choy and continue cooking for another 5 minutes. Taste and season with salt if needed. In a bowl, add rice and spoon nilaga over the rice. Don't forget to be generous with the broth. You can season to taste with patis (fish sauce). Enjoy!

Ceasar Chicken
I made this for a family friend's birthday party to celebrate his 90th birthday. It was a hit and so easy to make (especially for 52 people). The recipe below is for four servings. The number of ingredients is pretty low, which makes it super easy to fix. Using your favorite brand of ceasar dressing. Make sure it is not the creamy version.
4 skinless chicken breasts
1/2 cup chicken broth
1/2 cup Ceasar dressing
1 cup canned tomatoes (chopped or diced)
4 strips of crisp bacon (chopped)
2 tblsp fresh parley (chopped)
2 tblsp fresh basil (chopped)
2 tblsp canola or olive oil
Pepper to taste
Pat chicken breast with a paper towel to remove any moisture. In a deep fry pan, heat the oil. Fry chicken breasts until brown on each side, approximately 5-7 minutes per side. Do not crowd the chicken. Add chicken stock and ceasar dressing. Reduce heat to medium and continue cooking for 4 minutes. Stir in tomatoes and season with pepper. Turn chicken breasts over and continue to cook for 2 minutes. Add the the fresh parsley and basil and cook for another 2 minutes. There should be enough sodium in the dressing and chicken broth not to need salt. Remove from heat and season to taste. Serve with a salad and your favorite rice pilauf.

Tandoori Chicken
This is probably one of the most famous dishes from India. This is absolutely wonderful. The spices add so much flavor, but not with heat.
Ingredients:

3lbs chicken (assorted pieces)
1/2 lemon
2 tblsp melted butter or ghee
salt and pepper
Masala Paste:
1 tblsp ginger paste
2 tblsp garlic paste
1 1/2 tblsp paprika
1 tsp cinnamon
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp chili powder
1/4 tsp ground cloves
3/4 cup yogurt
Few drops of edible red food coloring
In a small bowl, mix lemon juice and butter. Rub the lemon juice and butter mixture all over the chicken pieces. Season chicken with salt and pepper. In a separate bowl make the masala paste by combining all the masala ingredients and mix until all have been incorporated. Using your hand, rub all the chicken pieces with the masala paste. Make sure all the chicken pieces are well coated. Cover with plastic wrap and refrigerate for 6 hours, preferably overnight.
Preheat oven at 400 degrees. Lay chicken pieces on a roasting rack and tent (lightly cover) with foil, place in oven and cook for 30 minutes. Remove the foil. Change the oven setting to either broil or roast in a low setting. Continue cooking the chicken for another 15 minutes or until chicken's juice runs clear. Remove from the oven and let stand for 10 minutes, serve garnished with cilantro and lemon slices. This is great with the vegetable pulao on this same blogsite. Enjoy!
Chicken Cooked in Coconut Milk (Manok sa Gata)
The combination of chicken and coconut milk is very popular in the pacific islands. There are several versions depending on where you look (Thailand, Indonesia, Philippines, etc.) This is one of our favorites at home. This is even better the next day, if it lasts that long.
Ingredients:
1 1/2 lbs of chicken (thighs, legs and breasts)
3/4 cup vinegar
2 1/2 cups chicken broth
1 inch ginger (minced or paste)
6 cloves garlic (minced)
1 13oz can coconut milk
3 tblsp sugar
Salt and Pepper
1 tblsp canola or olive oil
In a deep pot or sauce pan, heat the oil. Add the ginger and garlic and saute for approximately 1 minute. Add the chicken pieces and cook for another 3 minutes. Add the vinegar and chicken broth. Season with salt and lots of pepper, then add the sugar. Reach to a boil, then reduce to a low boil. Cook for 30 minutes. Watch carefully to ensure the liquid does not dry out. Add the coconut milk and continue to cook in a low boil for another 20-25 minutes. Season with salt and pepper if necessary. Spoon over rice with a generous amount of the soup. Enjoy!

Afritada (Filipino Pork and Chicken Stew)
Spain occupied the Philippines for over 400 years. Not surprising then to find foods with a lot of Spanish influence. Afritada reflects that Spanish influence. This can be made with just chicken or just pork. We love the combination at my house since it covers everybody. My husband loves the pork and my mother loves the chicken. So, you can't go wrong. I made some changes to make it easier.
Ingredients:
1lb of chicken parts (breast, thighs, wings, etc.)
1lb pork shoulder or butt (cut into chunks)
4 potatoes (cut into chunks)
1 large onion (chopped)
1 cup chicken stock
1-2 bay leaves (1 large or 2 small)
4 carrots (peeled and cut into chunks)
1/2 cup frozen peas
1 green bell pepper (cut into bite size chunks)
1 red bell pepper (cut into bite size chunks)
1 20oz can of tomatoes (roughly chopped in food processor)
1 20oz can of stewed tomatoes (roughly chopped in food processor)
1/4 cup canola or olive oil
Salt and pepper
1 small can of garbanzo beans (drained and rinsed) - optional
In a food processor, roughly chop the canned tomatoes. Process until you get the texture you want. Short pulses for some chunks, or longer processing if you want more of a puree. Do the same with the stewed tomatoes.
In a large pot or dutch oven, heat an 1/8 cup of the oil in high heat. Add the pork chunks and lightly brown for approximately 3 minutes. Remove from pan and set aside. Do the same with the chicken, and add that the pork. In the same pot, add the rest of the oil and the potatoes. Cook the potatoes for approximately 4 minutes until some of the sides have browned. Remove the potatoes and set aside. Reduce the heat to medium-high and add the chopped onions and the bay leaf to the hot oil in the pot. Cook the onions until they are translucent, approximately 3 minutes. Add the canned tomatoes and stewed tomatoes. Continue cooking stirring constantly until tomatoes are heated through. Add the pork, chicken and potatoes back into the pot. Continue stirring until all the meat and potatoes are well coated with the tomatoe/onion mixture. Add the carrots, peas and the chicken broth; continue stirring. Cover and reduce to medium heat and keep at a low boil. Keep covered and cook until chicken, pork and potatoes are tender, continue stirring to ensure that it does not stick to the bottom of the pan and burn; this should take approximately 30 minutes. Season with salt and lots of pepper. Add the both the red and green bell peppers. If using garbanzo beans add that at this time. Continue cooking for another 10 minutes to allow peppers to cook but still have a crunch. Taste for seasoning. Add salt and pepper if necessary. Serve hot over steamed rice.

Pork and Chicken Adobo
This is probably the most world known Philippine dish. Even the Neiman Marcus cookbook has a recipe. I have never met an American who did not swoon over this dish or when they find out my heritage, wanted to let me know that they have had adobo and how wonderful this is. Though Mexico has adobo, this is very different from their version. If you have never tried any of the dishes of the Philippines, start with this first, you will absolutely fall in love with the country when you do.
Ingredients:
1lb boneless pork shoulder (cut into large chunks)
1lb chicken thighs and/or drumsticks
10 cloves of garlic (crushed whole)
1 1/2 cups chicken or pork broth
1/3 cup soy sauce
2/3 cup white wine vinegar or coconut vinegar
2 tblsp sugar
2 tsp of black pepper
2 tblsp oyster sauce
1 Bay leaf
2-3 tblsp canola or olive oil
In a large dutch oven or pot, add all the ingredients except for the oyster sauce. Turn the heat up and allow to boil. Reduce to a simmer and cover; add the oyster sauce. Allow to cook for 1 hour (check occassionally and stir) until meat is tender and liquid has reduced. Do not allow the liquid to go completely dry.
In a separate pan, add the oil and heat. Remove the chicken and pork pieces from the pot. Reserve the cooking liquid. Fry the meat pieces in the pan until it browns turning the meat continuously to create a nice crisp skin. Since the meat is already done, do not over fry. You just want to add a nice crisp outer layer. Remove the meat from the pan and into a plate. Spoon rice into a bowl, add the pork and chicken piece, pour some of the cooking liquid over the meat and rice. Enjoy!
Mojito Chicken
Ingredients:
2 tblsp olive oil
1 small onion (minced)
4 cloves garlic ( minced)
1 tablespoon sugar
1 lb skinless boneless chicken breasts (cut up into bite size pieces)
3/4 cup fresh lime juice
1/2 cup rum
1 teaspoon finely grated lime zest
1/4 cup chopped fresh mint leaves
Salt and pepper
In a glass bowl, toss chicken breast pieces with 1/4 cup of lime juice, salt and pepper. Let marinade for 30 minutes. Heat oil in a large skillet over medium heat. Add onion, garlic and sugar and cook for approximately 3 minutes, until oniond are soft, stirring constantly. Add chicken and saute up to 5 minutes until golden brown on all sides.
Add the rest of the lime juice and carefully, off the heat, add the rum. Return to the heat and add lime zest and bring to a simmer. Simmer for 3 minutes, until chicken is cooked through, about 12 to 15 minutes. Season with additional salt and pepper if needed. Serve chicken, garnished with mint, over rice with roasted asparagus on the side.
Brown Rice with Chicken and Chorizo
This is a hearty one pot meal. The chicken combined with the chorizo and rice is similar to the classic Spanish dish called arroz con pollo. The brown rice adds a nice twist. Check it out.
Ingredients:
2 lbs chicken thighs
3/4 lbs smoked or Spanish chorizo (cut into 1" thick slices)
2 tblsp olive oil
2 tblsp chopped fresh oregano or 1 tblsp dried oregano
1/2 tsp crushed red pepper or less (to taste)
6 cloves garlic (minced)
1 large onion (minced)
1 bay leaf
1 1/2 cups long grain brown rice (rinsed)
1/2 cup white wine
3 cups chicken broth
3 roasted red peppers (cut in strips)
1 cup frozen peas
Salt and pepper
Preheat oven at 400 degrees. In a large dutch oven or a deep oven proof pan, heat the olive oil. Add the sliced chorizo and cook for approximately 5 minutes, stirring constantly. Remove to plate with a slotted spoon. Working in batches, add the chicken thighs. Do not crowd. Brown each side (about 4-5 minutes each). Remove from the pan and set aside. Once all the chicken thighs are done, Pour off some of the fat and grease, leaving approximately 3 tablespoon in the pot. Add the onion and garlic stirring constantly until onions are lightly browned. Add the bay leaf, red pepper flakes and oregano and cook for another 30 seconds, then add the roasted red pepper. Continue stirring for another 2 minutes, then add the brown rice. Stirring constantly until rice is well coated and well mixed with the other ingredients. Continue cooking for another 2-3 minutes. Add the wine and continue to cook for another minute. Return the chicken and chorizo to the pan and add the chicken broth. Season with salt and pepper and cover bringing it to a boil; add the peas.
Transfer the covered pot to the oven and bake for 1 hour and 10 minutes until chicken is done and rice is tender. Remove from oven and allow to sit for 10 minutes covered before serving.

Paella Valenciana
There are so many paella recipes out there it just boggles the mind. I tried several that I found in cookbooks and have watched several chefs on the FoodNetwork take a stab at it. I find the short cut versions just does not have the flavors that you get when you fix the true version. Even in Spain, depending on the regions, the paella can vary as well. Paella Valenciana is from the Valencia region. The ingredients are extensive and it can get expensive, but worth it for those special occassions. Even if you do not have the paella pan, you can make this fabulous dish. Don't skimp on the ingredients, it's what make this dish fabulous. Eaten al fresco with chilled Sangria, what more can you ask for?
Ingredients:
1 lb of chicken (cut into pieces)
1 Spanish chorizo (sliced) - Chorizo de Balbao
1 medium onion (minced)
3 cloves garlic (minced)
3 tomatoes (chopped) or 1 14oz can of chopped tomatoes
1 large red bell pepper (chopped)
1 lb shrimp in shell or use 1/2 peeled/ 1/2 in shell
1 lb mussels or clams (bearded and clean or frozen in shell)
1 tblsp paprika
2 cups of long grain rice (soaked in cold water for 1 hour)
Juice of 1 lemon
1/4 tsp saffron threads soaked in 1/4 cup warm water
1 1/3 cup shelled peas (fresh or frozen)
Salt and pepper
2 tblsp olive oil
3 cups of chicken broth
1 tblsp parsley (chopped) for garnish
Optional:
1 lb cooked lobster meat (reduce shrimp to 1/2; reduce shellfish in 1/2)
1/2 lb of pork shoulder (cut in pieces) can replace 1/2 of the chicken
In a large pan, heat oil. Lightly fry chorizo until edges are a light brown. Remove from pan and set aside. Fry chicken pieces in batches until evenly browned. Do not crowd. (If using pork, fry pork pieces until evenly browned and transfer with chicken). Remove chicken pieces and transfer to the same plate as the chorizo. Add onions and stir constantly until translucent (2-3 minutes), then add the garlic. Continue to fry for another minute, stirring constantly. Add paprika and stir for 30 seconds, then add the tomatoes and bell peppers. Cook for 6-8 minutes. Mixture should start to thicken. Drain rice and add to the pan. Stir until rice is coated with the spices and tomato mixture for approximately 3 minutes. Season with salt and pepper. Add the chicken broth, lemon juice and the saffron thread soaked in warm water. Bring to a boil. Cover and reduce the heat to low/simmer. Add the chicken, chorizo and peas to the pan. Cover and cook for 20 minutes, stirring occassionally. Add the shell fish and shrimp (I usually arrange it to make it look like the picture), continue to cook for another 10 minutes or until liquid is completely absorbed. If using lobster, add them to the last 5 minutes of the cooking process. Remove cover, sprinkle with the chopped parsley and serve in the pan.
Note: If rice is not tender, add a 1/4 cup of chicken broth or water, stir and continue to cook covered in low heat for another 10 minutes. If using fresh mussels or clams, discard any unopen shells.

1 lb shrimp in shell or use 1/2 peeled/ 1/2 in shell
1 lb mussels or clams (bearded and clean or frozen in shell)
1 tblsp paprika
2 cups of long grain rice (soaked in cold water for 1 hour)
Juice of 1 lemon
1/4 tsp saffron threads soaked in 1/4 cup warm water
1 1/3 cup shelled peas (fresh or frozen)
Salt and pepper
2 tblsp olive oil
3 cups of chicken broth
1 tblsp parsley (chopped) for garnish
Optional:
1 lb cooked lobster meat (reduce shrimp to 1/2; reduce shellfish in 1/2)
1/2 lb of pork shoulder (cut in pieces) can replace 1/2 of the chicken

Chicken Enchiladas
This is so simple to fix. Save yourself a lot of itime like I do and get a rotiserrie chicken from the grocery store. It taste so much better and the chicken is so juicy. I buy queso fresco from the ethnic grocery store. I find the white Mexican cheese creamy tanginess enhances the enchilada.
Ingredients:

1 hand full of cilantro (chopped)

1 14oz can of tomato (pureed with small pieces/chunks)
12 6inch corn torillas (preferably fresh)
2 cups of shredded Montery Jack cheese or Mexican mix
2 tblsp olive oil
Salt and pepper

sour cream

Use your judgement and make sure rolls are not too loose. Do the same with the other tortillas and line them up in the casserole dish side by side. Cover enchilada rolls with about 3/4 of the sauce from the sauce pan. Then top with the Monterey Jack cheese or Mexican mix. Bake in a 350 degree oven for approximately 20-25 minutes or until cheese has melted and bubbly.
Garnish the top with shredded lettuce, and the chopped tomatoes. Serve sour cream and additional enchilada sauce on the side with a side of Spanish rice. Ole!!!

Cuban Chicken with Chorizo and Rice
Don't let the long ingredients list scare you. Remember, you are making an entire meal in one dish. The dish will be prepared in stages which makes it more manageable, marinading the chicken first, then preparing the rice. I tried it with andouille sausage for some interest and WOW! It was great. The andouille sausage gave the rice a nice bite. Do not use Mexican chorizo. The spices will overpower and not mix well with the other seasonings. We had leftovers, and this was even better the next day.
Ingredients for the chicken:
1/3 cup fresh lime juice (or key lime juice)
1/3 cup fresh cilantro (chopped)
3 tblsp olive oil
1 tsp thyme
2 tblsp paprika
1 tsp cumin
1/2 tsp allspice
Salt and pepper
4lbs chicken pieces
Ingredients for rice:
1/4 lbs fully cooked Spanish chorizo or Portuguese linguica (chopped) (for spicier version, try andouille sausage)
2 cups onions (minced)
1 yellow bell pepper (chopped)
5 cloves of garlic (minced)
2 cups arborio rice or short grain white rice
2 1/2 cups chicken broth
2 medium tomato (chopped)
1 1/2 tblsp paprika
4-5 saffron threads
1 whole pimiento or roasted red bell pepper (thinly sliced)
1 tblsp olive oil
Lime wedges
Take chicken out of bag and save the marinade. In a large deep frying pan heat 1 tblsp of olive oil. Gently fry the linguica/chorizo/sausage until lightly brown. Remove from the pan and set aside. Fry chicken pieces skin side down about 2-3 pieces at a time. Do not crowd. Brown each side approximately 4 minutes. Remove from pan and continue to cook the rest of the chicken pieces. Transfer chicken pieces to a plate. Pour off about half of the oil from the pan, leaving the othe half and return to the stove top. Add onions and bell peppers. Saute for approximately 4 minutes scraping the bottom of the pan to get all the browned pieces. Add garlic and paprika, continue to stir for another 2 minutes. Add the rice and continue to saute for another minute. Add the chicken broth and tomatoes with their juice, saffron thread and the reserved marinade. Continue stirring and bring to a boil. Return the chorizo and stir, press the chicken pieces lightly into the rice mixture. Reduce heat to low, cover and let cook for 20 minutes checking frequently to ensure bottom does not burn. Add more broth or water (about 1/4 cup) if rice appears dry and stir to mix the liquid. Season with salt and pepper, stir and continue to cook for another 10 minutes. Serve rice and chicken in a bowl with sliced limes.

Filipino Fried Chicken
Growing up in the Philippines, I remember the time when Kentucky Fried chicken came into town. But, the Philippine culture has its own version of fried chicken. It is considered street food and can be found in street stalls in all the large cities and small towns. You will find the ingredients quite unique. I find dark meat to be the best and using dark beer is great for this recipe. I would normally recommend fresh onions and garlic, but I found the powder version provides more flavor during the marinade process.
Ingredients:
6-8 pieces of chicken (thighs, drumsticks, breasts)
3-4 tsp onion powder
3-4 tsp garlic powder
1 bottle beer (preferably dark)
3-4 tblsp soy sauce
Juice from 3 small limes
Enough oil to deep fry (canola or peanut)
salt and pepper
Place chicken pieces in a wide bowl. add, garlic and onion powder, soy sauce and lime juice. Rub mixture well into chicken piece. Cover and refrigerate allowing for chicken to marinate for 1 hour. Add beer and recover continuing to marinade for another 4 hours or overnight.
Heat enough oil in a deep pan to fry chicken pieces. Remove chicken pieces from the marinade; remove as much moisture as possible before frying to reduce the amount of splattering. Fry chicken pieces in batches until cooked through and the outside is a rich golden brown and crispy. Drain on kitchen paper town and season with salt and pepper. Serve with rice.
Chicken Tikka Masala
This is probably one of the most popular Indian dishes. This is a recent invention made in one of the restaurants here in the United States. Oven roasted or grilled chicken will work as well if you do not have tandoori chicken. To make Tandoori chicken all you need is Tandoori paste, which can be purchased in most ethnic grocery stores, mix it with 1 cup of yogurt. Marinade the chicken piece then broiler in the oven.
Ingredients:
8 pieces cooked Tandoori chicken
1 14oz canned chopped tomatoes
1 1/4 cups heavy cream
2 tblsp butter
2 cloves garlic (minced)
1 fresh red chilli (seeded and minced)
3 tsp cumin
3 tsp paprika
salt and pepper to taste
Cilantro sprigs for garnish
Melt the butter in a large skillet. Add garlic and chilli and stir fry for 1 minute. Stir in cumin and paprika. Continue to stir for another 30 seconds. Do not allow spices to burn. Add the tomatoes with juice and continue stirring. Stir in the heavy cream and allow sauce to simmer in low for 10 minutes stirring frequently. Sauce should thicken.
Remove bones from the chicken pieces. Add the chicken pieces to the sauce. continue cooking for another 3-5 minutes or until chicken is heated through. Garnish with cilantro.
Spicy Creole Chicken Braised in Tangelo-Olive Sauce
Another really good chicken and citrus pairing! The Creole seasoning gives it a nice heat but does not overwhelm you. Try it, I think you will be pleasantly surprised. Tangelo is a hybrid of Mandarin oranges and grapefruit. If you are not able to find it, use tangerines or clementines.
1 cup fresh tangelo juice (approx. 2-3 tangelos)
1/4 cup lime juice
4 tsp of Creole or Canjun seasoning (divided exactly into 2)
3/4 tsp ground cumin
1/2 cup all purpose flour
3 lbs of cut up chicken (remove skin)
3 tblsp olive oil
1 red bellpepper (cut into strips)
1/2 cup pimiento stuffed olives (roughly chopped)
2 tsp honey
Salt and pepper to taste
In a medium bowl, combine tangelo juice, lime juice, 2 tsp of Creole/Cajun seasoning and cumin. Whisk until blended. In another bowl, combine flour and 2 tsp of Creole/Cajun seasoning; mix well. Dip chicken pieces in the citrus blend then into the four mixture, shaking off excess. Save the marinade for the sauce. In a large nonstick pan/skillet add the olive oil and heat. Cook chicken in batch approximately 8-10 minutes or until brown. Turn once and brown the other side. Add oil if necessary. When all chicken pieces are done, remove excess oil and add the red bell peppers; cook until crisp tender. Stir in the remainder of the marinade, olives and honey. Bring to a boil, reduce the heat to low and return the cooked chicken pieces back to the pan. Cover and allow the chicken to simmer in the sauce for 15 to 20 minutes. Remove cover and allow the chicken to cook for another 5 minutes or until sauce has thicken and chicken is no longer pink in the center. Since the olives provide some of the salt, taste first, add salt and pepper if needed. Serve over rice.
Asian Citrus Marinated Chicken
Chicken and citrus is such a great pairing you can't go wrong. I found tangerines, Valencia oranges or clementines are the best. Again, fabulous over rice!
Marinade:
4 cloves garlic (minced)
3 tblsp soy sauce
1 tbsp chili-garlic sauce
2 tsp dark sesame oil
4 skinless boneless chicken breasts
Sauce:
2-3 small oranges, tangerines or clementines (sliced in large wedges)
2 shallots (minced)
3 tsp sugar
1 tsp fresh ginger (grated or pureed)
3/4 cups orange juice
2 tblsp lime juice
1/4 cup water
2 tsp water
2 tsp chili-garlic sauce*
1 1/2 tsp fish sauce*
1 tsp rice vinegar
1 1/2 tsp cornstarch
3 tsp oil (canola or olive)
Combine all the ingredients for the marinade except for the chicken. Pour in a resealable plastic bag; add chicken. Seal the bag and refrigerate for 4 hours or overnight, turning occasionally.
In a medium sauce pan, combine, orange slices, shallots, sugar, ginger and 1/4 cup of water. Bring to a boil and reduce heat to medium, allowing to cook for another 10 minutes until reduces to half. Add orange juice, lime juice, chili-garlic sauce, fish sauce and rice vinegar. Simmer for another 5 minutes. In a small bowl disolve cornstarch with 2 tsp of water. Whisk into sauce; boil for 1 minute until sauce thickens. Keep warm.
In a frying pan/skillet or grill pan, add the oil and heat. Cook the chicken 6-8 minutes turning once until chicken is no longer pink in center. Remove from skillet and let it rest for 3-5 minutes. Slice chicken breast diagonally, place on a serving platter and pour warm sauce over the chicken slices. Serve with your favorite long grain rice (i.e. Jasmine, basmati, etc.)
Note*: chili-garlic sauce and fish sauce can be found in the Asian section of your favorite grocery store or go to any Asian grocery store or market. Sea Salt can be used as a substitute for the fish sauce.
Middle Eastern Chicken Thighs
Cinnamon is not only for sweet dishes; it is great in savory dishes like this Middle Eastern Chicken Thighs. The fragrance makes you feel like you are in some exotic land. Dark meat is moister and has so much flavor, but if you like breast meat, feel free to use it. Pair it with a beatiful red wine from Spain - Marques de Caceres Rioja Crianza - an earthy red wine with a hint of spice. Enjoy!
Ingredients:
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
1 1/2 lbs of chicken thighs
1 tsp olive oil1 medium onion (minced)
4 garlic cloves (minced)
1 can (14.5) diced tomatoes
1 tsp sugar
1 cup peas (thawed)
Salt and pepper to taste
In a small bowl, mix cumin, coriander and cinnamon. Coat chicken with the spice mixture. Heat oil in a large nonstick skillet until hot but not smoking. Add onion, cook until soft stirring continuously. Add garlic and cook for approximately 30 second to release its fragrance. Transfer onion and garlic mixture to a small bowl. Add chicken and cook for 10 minutes or until brown turning once. Return the onion garlic mixture back to the skillet. Stir in tomatoes and sugar until chicken is well coated. Lower heat and cover. Allow chicken to simmer until no longer pink. Add the peas, salt and pepper to taste. Cook for another 2 minutes.
Poached Chicken Breast in Lemon Herb Sauce
This takes about 30 minutes to prepare. Using boneless chicken breasts makes it possible to create an elegant dish in a short time.
1 medium zucchini, (cut in half moons)
4 scallion (chopped)
2 garlic cloves (minced)
2 cups chicken broth
6 boneless skinless chicken breasts (about 5oz each)
1 large egg (room temperature)
3 tblsp fresh lemon juice
1 tsp cornstarch
2 tsp chopped fresh herb (like dill, tarragon or parsley)
Salt and pepper
Heat oil over medium heat in a large sauce pan. Add carrots, zucchini and scallion. Stir often and cover between. Cook till vegetables have soften (approximately 3 minutes). Add garlic, stir and cook for 1 minute. Add chicken broth to the pot and bring to a boil. Season chicken breasts with salt and pepper. Add the chicken breasts to the pot. Return the broth to a boil. Reduce the heat and allow to simmer in low and cover. Continue to cook until chicken breasts are firm and cooked through (approximately 12 min).
Remove chicken breasts from pot and place on a cutting board. Cover chicken breasts to keep warm with aluminum foil.
In a small sauce pan, whisk egg, lemon juice, cornstarch and herbs. Place sauce pan on stove using low heat. Slowly stir in 1/2 cup of the broth into the egg mixture. Continue to whisk until the sauce has thickened but not simmering. Season with salt and pepper.
Slice chicken breast diagonally into thin pieces. Spoon rice onto a place, add the vegetables cooked in the broth and place the sliced chicken breast over the rice. Spoon sauce over chicken and rice. Enjoy!
